This Creamy Pumpkin-Leek Soup is the perfect blend of sweet and savory—featuring roasted pumpkin flavor, mellow leeks, fresh herbs, and a hint of maple syrup. It’s a cozy classic that tastes like fall in a bowl.
Ingredients (serves 4)

4 tbsp unsalted butter

2½ lb leeks (white/light green parts), thinly sliced (~6 cups)

4 cloves garlic, roughly chopped

1 (15 oz) can pumpkin purée

1 apple, peeled, cored, and roughly chopped

6 cups low-sodium chicken broth

5 tbsp maple syrup
-
1½ tsp salt
-
½ tsp ground cumin
-
⅛–¼ tsp cayenne pepper (to taste)

1½ tsp fresh thyme, plus extra for garnish

1½ tsp fresh sage

¼ cup heavy cream, plus more for garnish

Instructions

Melt the butter in a medium pot over medium heat. Add leeks and garlic; cook until softened, about 10 minutes.

Stir in pumpkin purée, apple, broth, maple syrup, salt, cumin, cayenne, thyme, and sage. Bring to a simmer.

Simmer until the apple is very tender, about 15 minutes.

Use an immersion blender (or carefully transfer to a regular blender) to blend until smooth.

Stir in the heavy cream, taste, and adjust seasoning.

Garnish with a drizzle of heavy cream and a sprinkle of fresh thyme before serving.
